Raw Bar Recipe
Do you remember eating those Jupiter caramel bars when you were a kid? Well, we were given this recipe by a friend and have adapted it slightly to make it as easy as possible to make at home!
2 cups of organic cashews
1 cup (soaked for 4 hours) organic raw almonds
1 cup organic medjool dates (pitted)
1 pinch sea salt
1 tablespoon vanilla extract
1/4 cup organic flaked coconut (if desired)
filtered water (if needed)
Using a food processor, add cashews, almonds, dates, sea salt & vanilla essence. Blend. Add filtered water if ingredients looks too ‘dry’. Add coconut flakes (if you choose to!) and blend until ingredients look like a course paste. Press mixture into a rectangular cake/slice tin lined with baking paper and refrigerate until firm. Cut into desired shape. Eat!
*You can add other things to this recipe. We have made a version with cranberries and macadamias – yum!
